Fodmap Friendly Chocolate Mousse

Fodmap friendly chocolate mousse!

Combining protein packed tofu with antioxidant and magnesium rich cacao makes for a delightfully satisfying and nutritious snack or dessert… whichever way you want to look at it.

Ingredients: (serves two)
✨ 1 pack plain organic tofu
✨ 80g Soma Cacao (we recommend Karkar Island for this recipe)
✨1/3 cup maple syrup

Caramel Sauce:
✨ 2 tablespoons coconut oil
✨ 2 tablespoons cashew butter
✨ 2 tablespoons maple syrup

✨fresh blueberries to serve

Method:
1. melt cacao using the double boiler method or in the microwave (carefully!)
2. Blend the cacao with the tofu and maple syrup.
3. Melt the caramel sauce ingredients in a small pan. Once melted stir two tablespoons into the cacao/tofu mousse.
4. Chill mousse in the fridge, then serve in bowls, pouring over the remainder of the caramel sauce and topping with blueberries (or anything else!)
