Vegan Chocolate Pudding

And here's a quick, midweek healthy-ish treat made from 8 ingredients you've likely already got in your pantry 🀩

🍫 2 cups plant milk (we prefer oat milk)
🍫 3 1/2 tablespoons cornstarch
🍫 1/3 cup coconut sugar
🍫 85g Soma Cacao (Karkar island works best).
🍫 1-2 tablespoons coconut oil
🍫 pinch salt
🍫 tsp vanilla extract
🍫 2 tablespoons peanut butter

1. In a medium sized saucepan, combine plant milk, conrnstarch, coconut sugar, and salt.
2. Bring the mixture to a boil, whisking frequently.
3. Once the mixture starts to boil, reduce heat and keep whisking. The mixture should thicken.
4. Remove from heat. Add vanilla extract and peanut butter, stir through.
5. Melt the Soma Cacao with the coconut oil, using the double boiler method or in the microwave in 30 second increments.
6. Add to rest of ingredients and stir through. Mixture should be smooth not lumpy.
7. Add mixture into jars, cover with cling wrap and place in the fridge. (OR enjoy warm straight from the pot for a wintery pudding!!)
