These are bite sized balls packed with dates, nuts, and of course Soma Cacao ♥️
I really lovely the combination of chocolate and raspberry, so any recipe I stumble upon that combines the two always grabs my attention…
Ingredients: For the filling: ✨ 12 pitted medjool dates ✨ 1 cup walnuts ✨ 1/2 cup almonds ✨ 1/2 cup hazelnuts ✨ 2 big tablespoons crunchy peanut butter ✨ 1-2 tablespoons ginger bread spice (combo of ground ginger, cinnamon, allspice, nutmeg, cardamom, cloves) ✨ 1 tablespoon coconut oil ✨ 1 tablespoon cacao
For the chocolate coating; ✨ 100 grams Soma Cacao (a few heaped tablespoons) ✨ 1 tablespoon coconut oil ✨ 1-2 tablespoons maple syrup ✨freeze-dried raspberries ✨ salt
Method: 1. Soak the dates in a bowl of hot water for 15 minutes or until soft. 2. Blend all filling ingredients in a high speed blender or food processor until you form a smooth dough. 3. Scoop out and roll the filling into small balls. 4. To make the chocolate coating, using the double boiler method or a microwave, carefully melt the Soma Cacao with the coconut oil and maple syrup until silky and runny. 5. Cover the date balls with the chocolate. 6. Place them on a plate lined with baking paper. 7. Decorate with freeze dried raspberries and some salt ontop. 8. Place the balls in the fridge to set for 30 minutes.
