Healthy(ish) Raw Vegan Cacao Caramel Slice


I recently visited my parents down in Sydney. They are, like me, avid cacao consumers, and have started getting creative with recipes, which is proving enormously helpful for me!

Mum recently made this cacao caramel slice for us, and I can confirm - it is divine, and hits the sweet spot for sure.

3/4 cup oatmeal
1 tsp Soma Cacao
1 tsp cacao powder
2 tbsp coconut oil
2 tbsp maple syrup
ยฝ tsp pure vanilla extract

1 cup dates soaked in boiling water 15 minutes
ยฝ cup cashews soaked in boiling water 15 minutes
ยฝ tsp pure vanilla extract

1 tbsp virgin coconut oil
1 tbsp Soma Cacao
2 tsp pure maple syrup

You'll need a small, square or rectangular container, about 10 x 15cm in size.
1. Mix all the ingredients for the base together and press it evenly into the container.
2. Drain and rinse the cashews and dates and process them with vanilla until they are smooth. If you want it to be sweeter, you can add 1 tablespoon of pure maple syrup.
3. Spread the caramel mixture on top of the base and put it in the refrigerator for 30 minutes to set.
4. Melt the coconut oil for the top layer over low heat and mix in cacao and maple syrup.
5. Pour this mixture over the caramel and refrigerate again until it sets. Once it's set, remove it from the container using baking paper, slice it into 16 squares and store it in the refrigerator.
