My beautiful friend @aims_in_love first introduced me to the delights of avocado/cacao mousse when we were living in Mexico. Local avocado, cacao, banana and honey were all readily available in the little town where we lived, but I didn’t think to mix them altogether!?
I’ve experimented with the recipe over time and added a few extra bits and pieces… feel free to give this a whirl and let us know what you think.
Ingredients: 🥑 2 ripe avocados, peeled and stoned 🍫100g Soma Cacao 🍯 2 Tablespoons maple syrup or runny honey 🍌 1 ripe banana 🥥 1/4 cup coconut or oat milk ♥️Dash of vanilla extract 🧂 Pinch of sea salt or Himalayan salt 🍓 Fresh strawberries or raspberries to serve (optional)
Instructions: ⭐️ Melt cacao slowly in the microwave or, preferably, using the double boiler method on the stove top (a double boiler (or bain-marie) is simply one pot stacked on top of another. You place water in the lower pot and heat it to a low simmer, with the cacao in the pot above. The steam from the lower pot gently heats the upper pot so the cacao can gradually melt without burning.) ⭐️Add all ingredients to your blender or food processor. ⭐️Blend until completely smooth. You may need to open and push down the sides with a spatula during the blend to ensure a silky consistency. ⭐️Place in serving bowls or cups, and refrigerate for 30-60 minutes before serving. ⭐️Top with fresh raspberries and enjoy!
