Peanut butter and cacao cherry jam slice by The Soul Foodie
A luxurious oat/almond peanut base with a tart/slightly sweet cherry raspberry jam, and then finished with a luxurious layer of Soma Cacao. It’s light and healthy but decadent all at the same time 😍🫶🏻

(Makes 9-12 pieces)

Ingredients:

Base 

✨ 200g Rolled Oats 
✨ 1/2 cup Almond Meal 
✨ 1 Banana, mashed 
✨ 5 Tblsp Maple Syrup 
✨ 3 Tblsp Peanut Butter 
✨ 2 Tblsp Coconut Oil, liquid or melted

Cherry Chia Jam 

✨ 200g Frozen Cherries 
✨ 100g Frozen Raspberries 
✨ 1 Tblsp Chia Seeds 


Topping 

✨ 3/4 cup Soma Cacao (I used the Karkar Blend) 
✨ 2 Tblsp Maple Syrup 
✨ 1 Tblsp Coconut Oil, liquid or melted
✨ Shredded Coconut 


Steps:

1. Grease and line a 9x9 inch square baking dish. 
2. Mix base ingredients in a bowl.
3. Put mix in the baking dish, press down firmly with a spoon, and smooth out with hands.
4. To make the jam add fruit to a small saucepan over medium heat. Once the fruit starts to soften press it down with a spoon to break it up. Add chia seeds, let it bubble happily for a few more minutes the consistency turns jammy. 
5. Spoon the jam over the base. 
6. In a microwave-safe bowl combine Soma Cacao, coconut oil and maple syrup. Heat in 20-30 second bursts until the chocolate melts. Mix until smooth. (You can also do this on the stovetop)
7. Pour chocolate mix on top of jam layer and smooth it out. 
8. Finish by sprinkling shredded coconut over the top.
9. Cool in the fridge for at least four hours. Slice into slices and enjoy.
10. Stores in the fridge for up to 5 days.
