Peanut Butter, Cacao, Oat Slice

 This recipe was sent to me by my friend Liz. Here is her description:

I’ve been making this with cacao powder for years but have finally become ready to ‘sacrifice’ some of the good stuff to it. I say sacrifice because, as you know, I am very dedicated to the business of drinking it! Anyway, this is a massive improvement on the original recipe, so now it’s a breakfast food.

Ingredients:

  • 85g Soma Cacao

  • 2 heaped tablespoons peanut butter

  • 4 tablespoons maple syrup

  • 3 tablespoons coconut oil

  • 1 teaspoon vanilla essence

  • A couple of good twists of rock salt

  • 2 cups rolled oats.

Method:

  1. Melt the cacao in a heat proof glass bowl over boiling water.

  2. Once melted, immediately add all of the other wet ingredients and stir until completely blended.

  3. Add one cup of the oats and mix until they’re all coated in the cacao mixture, then add the second cup and mix again until fully coated.

  4. Line a loaf or flan tin with baking paper and add the mix, pressing it down firmly and into the corners with the back of a spoon.

  5. Place the tin into the fridge and leave for a couple of hours. Once nice and solid, slice it into eight pieces and store in the freezer. My daughter loves these in her lunchbox.
